SOY CHORIZO POTATO TACOS

Soy chorizo and potato tacos come together quickly if you are looking for a delicious breakfast, brunch, lunch or even dinner. Add in your toppings such as avocado, guacamole, salsa or even vegan sour cream. If you have less than 30 minutes then this is something you can enjoy in this time frame.

INGREDIENTS:

2 soy chorizo

1 bunch cilantro

4-6 white potatoes

1 large white onion

INSTRUCTIONS:

1. Get a pot of water and fill it up halfway

2. Clean cilantro and white potatoes

3. Peel the skin off the potatoes and then rinse again to remove dirt

4. Chop cilantro and white onions

5. Place potatoes inside the pot and add sea salt to the water once it’s boiling

6. Cook potatoes until fork tender and you can smash them

7. Drain the water out the pot and use the same pot to smash the potatoes

8. Spray the cast iron skillet and place the soy chorizo in the cast iron skillet and cook until golden brown for 10 -15 minutes

7. Heat up corn or flour tortillas and then place your smashed potatoes, chorizo and then top with cilantro and white onion and optional add in your favorite salsas, guacamole or vegan sour cream.
